Sillet bacon potato cheese tart

Do you like bacon? I sure know I love bacon. I actually purchased from Zaycon this summer a whole case of bacon. My husband planted a small garden and we made Jalapeno poppers just about every weekend. I figured it would be best to have plenty of bacon on hand. I found other wonderful recipes to use with this wonderful bacon.

Skillet Bacon, Potato ,& Cheese Tart

You will need:
4 Large Russet Potatoes
 1 1/2 pounds of Bacon
16 oz of cheddar cheese

Line the cast iron skillet with bacon so it overlaps the pan. Thinly slice the potatoes. You do not need to remove the skins. Put a single layer of potatoes on top of the bacon. Cover with shredded cheddar cheese. Repeat another layer of potatoes topped with cheddar cheese. I did three layers of potatoes and cheese. Fold the bacon over the top of the potatoes and cheese mixture.
Place in Preheated oven at 350 for 2 hours. or until bacon is golden brown.
Slice and Serve. Enjoy!!!
