Pecan Pie Cupcake

I love pecan pie. I have never ever attempted to make one. My mom’s friend Marie can make a awesome ,melt in your mouth watering good pecan pie. This morning I was thinking, I would attempt to make another pecan pound cake. I made one for Christmas and that cake was a total failure. I was upset and so disappointed. I do try in the kitchen. I know I am not the best cook. I did ask for a kitchen aid and I did not get one.  I was suggested to try making a pecan pie cupcake. I figured I would not have all the ingredients but low and behold I did. Tlena gave me the recipe and I went straight to the kitchen. This is what happens when I should be cleaning house.

Pecan Pie Cupcakes

  • 1 cup chopped pecans
  • 1/2 cup all-purpose flour
  • 1 cup packed brown sugar
  • 2/3 cup butter, melted
  • 2 eggs

 

Directions:
1) Preheat oven to 350 degrees.
2) Combine all ingredients and mix well.
3 ) Spray a miniature muffin tin with non-stick cooking spray.
4 ) Fill each 3/4 full.
5 ) Bake in preheated oven for approx. 18 minutes.

I made 12 cupcakes. This is a simple and very quick semi-sweet dessert.
