Did someone say dessert?

This wonderful sweet treat would be great for any after dinner meal or any time for that matter. My husband loves to have something sweet to eat every single night.  The No Bake Samoa Éclair is perfect, because it makes enough to last a few days, unless you take to a family event it may all disappear. Usually we have an cooking event at the hunting club every so often and this sweet treat is on my list to take.


You will need:
2 packages of White Chocolate instant pudding mix
3 cups of milk
1 12oz tub of whipped cream
1 box of graham crackers
1 cup of Caramel topping
1 cup of shredded coconut
For the Chocolate Icing:
3 tbs of baking cocoa
3 tbs of butter
3 tbs of milk
1 cup of powdered sugar

In a blender mix together pudding packets and milk. Mix until pudding becomes thick. Fold in the Cool Whip. until well mixed.
In a coat a 9×12 baking pan with pam cooking spray. Place full graham crackers in a layer on the bottom. Top with 1/2 of the pudding mixture. Place another layer of graham crackers on top of the pudding.  Pour the remainder of the pudding mix over the top and top with more graham crackers.
In a separate bowl melt milk and butter together. Mix in powdered sugar and cocoa until smooth.
Spread the chocolate icing on top of your last layer of graham crackers. Drizzle with Carmel Sauce. Coat with coconut.
cover and place in the fridge overnight.
