No Bake Cheesecake

I love living near a strawberry farm.  I can go picking early in the morning and come straight home, and make some really sweet desserts.  I look forward to late April and May when the berries are just right for picking at the farm. There is nothing like going and picking yourself, and coming home to fresh berries. This summer has been extremely hot and not having to turn on my oven to make a scrumptious dessert is a blessing. My husband does not like cooked fruit so this is right up his alley for a sweet treat.

You can find some very good strawberries at any supermarket and whip up this quick and easy Mason Jar No Bake Strawberry Cheesecake and have enough left over for the week. If you are having a big family Sunday dinner this would make a nice after dinner treat.  I know my husband has to have something sweet every night,  I can make this to last him one for every night of the week.


Mason Jar No Bake Strawberry Cheesecake

6 4oz mason jars
1 package of cream cheese
1/2 cup of powdered sugar
1 tsp vanilla
12 oz of strawberries sliced
1/4 cup of sugar
1 tbsp lemon
6 Graham crackers

In a mixer place cream cheese, powdered sugar, vanilla. Blend until smooth. Set aside.
In a separate bowl mix strawberries 1/4 cup of sugar and lemon.
In food processor place graham crackers until they are crumbles.
In the bottom of the mason jar cover the bottom with graham cracker crumbles. Next a layer of cheesecake only till half full then a layer of Strawberries. Repeat the process till your jar is full. The cheesecake can be stored up to 7 days in the refrigerator.  This recipe makes 6-7 jars. Enjoy
