If you have been following my blogs long enough, you know I love trying new recipes.  I also love buying  meats in bulk and that is where Zaycon Fresh comes in handy. I just picked up 2 cases of chicken from Zaycon Fresh. If you have not tried Zaycon Fresh yet you really , really need to try them out just once. You will not be disappointed at all. The chicken breast are huge and so fresh. I repackaged my 2 cases and froze about 18 meals total. I didn’t get an exact count. I put 4 breast in a freezer bag. Loaded Baked Potato & Chicken Casserole Recipe

6 to 8 Potatoes ( I used the golden potatoes)
4 Breast or less
1 Cup crumbled bacon
2 cups shredded cheese
Garlic pepper
1 Onion
Dash of hot sauce
1 Stick of butter


  1. Spray pan with non stick cooking spray
  2.  Preheat oven to 400 degrees
  3. Cut potatoes in small quarter size
  4.  Cut up chicken breast into cubes

Place potatoes in the bottom of baking dish, add some seasoning to the potatoes. Add the cubed chicken to the top of the potatoes and season. Add onions on top of the chicken. Top with small dabs of butter all over the dish. Bake in the oven for approx. 1 hour.  If not done you may need to leave in the oven longer. If you do not feel as if you have enough butter to cook the potatoes you could add a little more. I baked covered for half the time and un-covered the last part of the cooking time. I also had to cook mine a little longer due to my potatoes were not cut really small. While the chicken and potatoes are cooking fry the bacon and when the dish is completely done add cheese and top with bacon and place back in the oven until the cheese melts.

This dish is really simple to make and I pretty much threw it together. You could add mushrooms, jalapeno, sour cream and so much other varieties to make this a very unique dish.
