Healthy Cheesy Baked Potato Casserole


It’s a cold night and you want some comfort food, but you also want something healthy. What should you do? You have plenty of options, if you get to searching around, but here’s a great casserole recipe that you may not have thought about before. It’s quick, easy, and can be made in a variety of ways to suit your tastes.




1 pound meat (the meat pictured is deer meat mixed with bacon, but turkey or chicken is a great, lean substitute)
1 bag of California style mixed veggies- frozen, with broccoli, cauliflower, and carrots
6 red potatoes, diced as pictured
Velveeta cheese (queso blanco is pictured, but other Velveeta is fine)
1 tablespoon garlic salt
1 tablespoon pepper


Dice potatoes and boil for 20 minutes.
Heat oven at 350 degrees.
Cook meat, if it isn’t already cooked (leftover turkey or chicken from holiday meals is great for this)
Thaw veggies, still in the bag, in a bowl of hot water.
Place potatoes, drained, in a baking dish.
Mix veggies with meat, pepper, and garlic salt.
Top potatoes with veggies and meat.
Cook cheese as directed. Pour on top of veggies, meat, and potatoes.
Bake at 350 for 10 minutes.
Allow to cool then serve!
