Cauliflower Creamed Spinach Low Carb

I had to try this amazing recipe Cauliflower Creamed Spinach this week. I paired this with some BBQ ribs.  When starting off the new year trying to eat low carb I find myself looking for new recipes. I get so tired of the same stuff. If I ate the same stuff every week, I would get bored and would end up stopping this new way of eating. I will eat just about anything so it is wonderful that I actually love all the foods. I love cabbage, cauliflower, and zucchini, so the low carb way of eating is prefect for me. I am in a few Facebook groups and some people share pictures and I remember my mom saying that the “food doesn’t look good”. Just because pictures don’t look great doesn’t mean the food is not good. I am not the best picture taker myself. I always have trouble with light in my house. I made this in my Ninja® Cooking System with Auto-iQ™  . I have also found that I need a food processor. I did the best with what I had on hand but this will be one of my next kitchen gadgets.

Weekly Meal Plan

Meal planning makes shopping and my life so much more simpler. Some of you may know or may not know I have decided to start back on a low carb. I lost about 30 lbs last year. I would like to lose a lot more this year. Sometimes sticking to a plan is not always easy for me. I am the type of person that must plan everything out. I want to be able to save money while on this journey. You ask how I plan to save money? I will also be making enough to take lunch to work. I often spend $15 a day on lunch eating out. I have a freezer full of meat, so I only need items to put together a meal. Last week, I spent $80 for 7 meals. My cost would have been a little cheaper if I had some of the spices. I figured within time that my cost may go down. Some weeks may be higher than others. Chicken & Dirty Rice

If you hate a lot of dishes to wash, you can make this chicken and dirty rice in one large cast iron pan. Cast iron should work best with this chicken and dirty rice because you need to transfer to the oven when done with the stove. Well, I think I used every dish I have to make this one pan chicken and dirty rice dish. I could not find my large cast iron pan, so I had to use a pan to cook the chicken, and sausage. After, I made this huge mess in the kitchen, I found my correct pan to use.  Amazing how that works when It should have all been one pan. Oh well, it tasted wonderful, so I decided to share this amazing recipe.

The flavor of this chicken and dirty rice is amazing. I am not sure if it is because of the spices or that I cooked in a cast iron pan . You will need to have a deep dish pan that can go from stove to oven.

Southwest Spicy Pasta

I am a huge lover of pasta. This Southwest Spicy Pasta dish is a little time consuming but I love it and make it about once a month. This picture does no justice for how awesome this Southwest Spicy Pasta  taste. I kind of put this recipe together myself and figured Southwest Spicy Pasta would be a perfect name. If you know me pretty well, I like simple meals to make. I would say this one would be a weekend pasta to make. I am a working lady and getting home after 5:30 everyday ,I prefer something less time consuming. As you look at the recipe thinking what takes so long?  I use Zaycon Bacon which is a little thick but so good. I usually fry most of the pack of bacon. The Rotel just gives the pasta enough kick to make you want more and more.

As you all know, I love exploring in the kitchen. I may not be the best cake baker but I love trying new dinners for my family. I also know you have just about any recipe within arms reach by typing in what you are looking for online. However, there is nothing like having an actual book in your hand for recipes. I love simple and fun meals also. Did someone say dessert?

This wonderful sweet treat would be great for any after dinner meal or any time for that matter. My husband loves to have something sweet to eat every single night.  The No Bake Samoa Éclair is perfect, because it makes enough to last a few days, unless you take to a family event it may all disappear. Usually we have an cooking event at the hunting club every so often and this sweet treat is on my list to take.

NO BAKE SAMOA ECLAIR

You will need:
2 packages of White Chocolate instant pudding mix
3 cups of milk
1 12oz tub of whipped cream
1 box of graham crackers
1 cup of Caramel topping
1 cup of shredded coconut
For the Chocolate Icing:
3 tbs of baking cocoa
3 tbs of butter
3 tbs of milk
1 cup of powdered sugar
