White Chocolate Dipped Pumpkin Cheesecake Bites

Pumpkin is such a popular flavor this time of year and holiday parties abound.  If you are looking for something classy and delicious to make easily for your next event look no further than these White Chocolate Dipped Pumpkin Cheesecake Bites.  You can make the cheesecake yourself from scratch using the easy recipe below or simply purchase a ready made cheesecake to dip and assemble as you desire.

WHITE CHOCOLATE DIPPED PUMPKIN CHEESECAKE BITES

Pumpkin Cheesecake:

1 Pie Crust to fit bottom of 9×13 casserole

4 8oz. Packages Cream Cheese Softened

1 10oz Can 100% Pumpkin Puree

1 1/4Cup Granulated Sugar

4 Large Eggs

¼ Cup All Purpose Flour

1 Teaspoon Vanilla

2 Teaspoons Pumpkin Pie Spice

·         Preheat oven to 375 degrees.

·         Place uncooked pie crust in bottom of 9×13 pan

·         In a large bowl beat together cream cheese, pumpkin and sugar. 

·         Mix in eggs vanilla, flour and pumpkin pie spice until smooth

·         Pour over crust and bake at 375 degrees for 1 hour

·         Remove from oven, cool and place in freezer for 3-4 hours or overnight. 

The key to success with dipping cheesecake is to make sure that you do not actually “dip” them but rather pour the melted chocolate or bark over them and spread.  Due to the crumbly nature of the cheesecake when trying to “dip” they will tend to break apart and leave crumbles in your melted chocolate.  If you prepare the cheesecake yourself I highly recommend freezing it overnight then cutting into bite sized pieces for dipping.  The colder the cheesecake is when you dip the better quality you will create.

DIPPING INGREDIENTS:

·         White Chocolate Candy Melts or Almond Bark

·         Long Skewers or Candy Sticks to hold cheesecake while dipping

·         Wax Paper or Aluminum Foil to place on after dipped

·         Bite Sized pieces of cheesecake

Prep

HOW TO:

·         Melt chocolate in microwave safe bowl on high in 30 second increments until just melted

·         Spear each “bite” with a skewer or candy stick

·         Hold over bowl containing melted chocolate

·         Pour spoons of chocolate over cheesecake rotating to coat well

·         Smooth excess chocolate off sides and place on prepared wax paper or aluminum foil

·         Store in airtight container for up to 1 week in refrigerator or up to 3 months in freezer.
