This is a new year and a new me and eating low carb with Zaycon Fresh makes life easy. I am tired of being overweight and want to make a change. Easy Cheesy Chicken Casserole

Many of you know, I love cooking simple and very easy meals. I cook a lot of chicken. I have made this dish twice now and it is very filling and it makes a good bit. It is just myself and my husband so we usually have left overs.

Easy Cheesy Chicken Casserole

Ingredients :

  • 6-8 Chicken Breast
  • 1 Bag of egg noodles
  • 2 Cans of cream of mushroom soup
  • 8 oz Cheddar Cheese
  • 8 oz Mozzarella Cheese
  • 24 oz Sour Cream
  • 1 or 2 Sleeves of Townhouse Crackers
  • Salt & Pepper
  • 1 Stick of butter

Directions:

Boil chicken breast until tender. I usually put them in the slow cooker for a few hours in water. When the chicken is done, shred the meat. Boil the noodles right before the chicken is done. In a large bowl mix the shredded chicken, cream of mushroom soup, both cheeses, sour cream, and noodles. (Salt & Pepper to taste) Melt the butter in the microwave, and crush the crackers and added the melted butter in a separate bowl.

Once you have the mixture in the large bowl place in a 9″x13″ greased pan. Top with the crackers on top and place in the oven. Cook for 30 minutes at 350 degrees.

I love to get my chicken through Zaycon Fresh. I can get a 40 lb box and freeze and have chicken for awhile. I actually just ordered 2 cases this morning.
