I am so ready for fall.  My husband and I are finally done with boating and gearing up for the fall. My husband hunts, so  I am now a free woman until January 1st. He spends every Friday night at the hunting club and comes back home on Saturday evenings. I don’t mind at all. I enjoy my free time. I can have some girl time, go shopping, play online or just sit and watch Lifetime if I want. I have no one to answer to as long as he is gone.  Every blue moon I will ride to the hunting club. I will wait until the weather is a lot cooler. I love sitting by the camp fire. Watching the children make S’mores and enjoying time away from civilization is nice every once and a while. We can not pick up cell service in the woods so I can’t get online.

I am hoping to plant a few fruit trees this year. I am a little worried that the deer may eat whatever produces.

As you all know, I love cooking in my Ninja but I also love slow cooking. I can not stand standing over a stove to cook.

What is your favorite casserole?

John Wayne Casserole:

  • 1 Bag Tater Tots
  • 2 lb ground beef
  • 2 packs of Taco seasoning
  • 1 1/2 cup of sour cream
  • 1 package of cheddar cheese
  • 1 onion
  • 1 bell pepper
  • 2 Cans Rotel

Directions:

Brown beef with onion ,bell pepper w/ taco seasoning ,and drain the ground beef. Add the tater tots to the bottom of the slow cooker. Place the browned ground beef on top of the tater tots. Place the 2 cans of Rotel on top of the beef, then mix the sour cream and 1/2 of cheddar on top of the Rotel. ( Save some of the taco seasoning to mix with the sour cream. ) Place the sour cream and cheese mixture on top of the Rotel. Cook on low for 4 hours, once done add a little cheddar cheese to the top of the casserole.

My husband and I have started camping and I wanted to take a cold dish with us. I wanted something easy that I could prepare at home and less work while camping. I honestly wasn’t sure how my husband would like the pasta. He absolutely loved it.  This is simple and very tasty.  This pasta salad will be perfect for summer time cook outs.

If you have been following my blogs long enough, you know I love trying new recipes.  I also love buying  meats in bulk and that is where Zaycon Fresh comes in handy. I just picked up 2 cases of chicken from Zaycon Fresh. If you have not tried Zaycon Fresh yet you really , really need to try them out just once. You will not be disappointed at all. The chicken breast are huge and so fresh. I repackaged my 2 cases and froze about 18 meals total. I didn’t get an exact count. I put 4 breast in a freezer bag. If you are like myself and love one pot simple meals this one is sure to please. Well, you will need to fry up some bacon but other than that throw everything in a slow cooker and you will have a meal in about 6 hours. I used my Ninja 3-in-1 Cooking System because I was able to fry my bacon right in the Ninja .

Cheesy Chicken Tater Tot Casserole

Ingredients:

2 boneless, skinless chicken breasts, cut into bite-sized pieces– I used frozen chicken breast
1 pkg tater tots
1/2 cup bacon pieces- I used a whole package of bacon
2 cups shredded cheddar cheese
3/4 cup milk or heavy cream
salt and pepper to taste

Directions:

In a large, lightly greased slow cooker, layer 1/2 the tater tots, then half the bacon pieces and half the cheese.

Layer the chicken pieces over the cheese. Sprinkle the chicken with salt and pepper.

Repeat the tater tot, bacon and cheese layer. Pour the milk over all.

Cover and cook on low for 6 hours.

I have been looking for a simple recipe for Lemon Butter Chicken. I found one that I love and I hope you will enjoy it also.  I love cooking with chicken thighs so make sure to check out my Chicken Thigh and gravy simple recipe.  I think this would taste great served with mashed potatoes.

Lemon Butter Chicken

Ingredients:

Boneless chicken thighs
Paprika
Salt & Pepper
3 Tablespoons of Butter
1 Cup chicken broth
1/2 Teaspoon of minced garlic
1/2 Cup of Heavy whipping cream
1/4 Cup of Parmesan cheese
1 Lemon
2 Cups of spinach

Directions:

Preheat oven to 400 degrees

  1. Season the chicken thighs with paprika, salt, and pepper
  2.  Melt butter 2 Tablespoons , add chicken thighs and cook on both sides until nicely golden brown ( set on the side once done), drain fat
  3. Melt 1 Tablespoon of butter and add garlic and one cup of chicken broth, heavy whipping cream, and Parmesan cheese, and squeeze the juice from lemon, keep stirred.
  4. Bring to a nice boil, reduce heat and add spinach until the spinach has softened.
  5. Place chicken thighs in a oven safe dish and pour the sauce on top of the chicken thighs.
  6. Bake for 30 minutes at 400 degrees.
