Chicken & Dirty Rice

If you hate a lot of dishes to wash, you can make this chicken and dirty rice in one large cast iron pan. Cast iron should work best with this chicken and dirty rice because you need to transfer to the oven when done with the stove. Well, I think I used every dish I have to make this one pan chicken and dirty rice dish. I could not find my large cast iron pan, so I had to use a pan to cook the chicken, and sausage. After, I made this huge mess in the kitchen, I found my correct pan to use.  Amazing how that works when It should have all been one pan. Oh well, it tasted wonderful, so I decided to share this amazing recipe.

The flavor of this chicken and dirty rice is amazing. I am not sure if it is because of the spices or that I cooked in a cast iron pan . You will need to have a deep dish pan that can go from stove to oven.

Southwest Spicy Pasta

I am a huge lover of pasta. This Southwest Spicy Pasta dish is a little time consuming but I love it and make it about once a month. This picture does no justice for how awesome this Southwest Spicy Pasta  taste. I kind of put this recipe together myself and figured Southwest Spicy Pasta would be a perfect name. If you know me pretty well, I like simple meals to make. I would say this one would be a weekend pasta to make. I am a working lady and getting home after 5:30 everyday ,I prefer something less time consuming. As you look at the recipe thinking what takes so long?  I use Zaycon Bacon which is a little thick but so good. I usually fry most of the pack of bacon. The Rotel just gives the pasta enough kick to make you want more and more.

As you all know, I love exploring in the kitchen. I may not be the best cake baker but I love trying new dinners for my family. I also know you have just about any recipe within arms reach by typing in what you are looking for online. However, there is nothing like having an actual book in your hand for recipes. I love simple and fun meals also. CQ Products has so many different types of cookbooks to pick from is is hard deciding on which would be my favorite.  I will say I love the easy desserts, simple even I shouldn’t mess them up. We are having a family dinner tomorrow so I will give a dessert a try tomorrow.

This wonderful sweet treat would be great for any after dinner meal or any time for that matter. My husband loves to have something sweet to eat every single night.  The No Bake Samoa Éclair is perfect, because it makes enough to last a few days, unless you take to a family event it may all disappear. Usually we have an cooking event at the hunting club every so often and this sweet treat is on my list to take.

NO BAKE SAMOA ECLAIR

You will need:
2 packages of White Chocolate instant pudding mix
3 cups of milk
1 12oz tub of whipped cream
1 box of graham crackers
1 cup of Caramel topping
1 cup of shredded coconut
For the Chocolate Icing:
3 tbs of baking cocoa
3 tbs of butter
3 tbs of milk
1 cup of powdered sugar

Do you like bacon? I sure know I love bacon. I actually purchased from Zaycon this summer a whole case of bacon. My husband planted a small garden and we made Jalapeno poppers just about every weekend. I figured it would be best to have plenty of bacon on hand. I found other wonderful recipes to use with this wonderful bacon.

No Bake Cheesecake

I love living near a strawberry farm.  I can go picking early in the morning and come straight home, and make some really sweet desserts.  I look forward to late April and May when the berries are just right for picking at the farm. There is nothing like going and picking yourself, and coming home to fresh berries. This summer has been extremely hot and not having to turn on my oven to make a scrumptious dessert is a blessing. My husband does not like cooked fruit so this is right up his alley for a sweet treat.

You can find some very good strawberries at any supermarket and whip up this quick and easy Mason Jar No Bake Strawberry Cheesecake and have enough left over for the week. If you are having a big family Sunday dinner this would make a nice after dinner treat.  I know my husband has to have something sweet every night,  I can make this to last him one for every night of the week.

Ingredients:
6 4oz mason jars
1 package of cream cheese
1/2 cup of powdered sugar
1 tsp vanilla
12 oz of strawberries sliced
1/4 cup of sugar
1 tbsp lemon
6 Graham crackers
